Ribs 1/24/2010

We made ribs this past sunday. Started the coals using the minion method and went to church. It took about 1.5 hours to come up to temp. I think next time I should just put in a lit chimney of charcoal to get it up to temp quicker, then put in the basket for the minion method. We cooked 2 racks of baby backs using the 3-2-1 method. Used foil in the 2 hour stretch. Next time we should add our mop or apple juice or something to the ribs before foiling. Also maybe drop it to 1 hour in the foil and then 30 min on the last stretch with the mop. They were tasty, but a little too mushy. A little firmer would be good and I think the less time in the foil would help that. the temp was about 50 degrees and mostly no rain most of the day. I used about a bag of charcoal or maybe more. Way more fuel that I should have needed. We also cooked potatoes, pork chops and ABTs. those took about 1 chimney of charcoal so it wasn't enough to make any difference. I also want to get a bag of apple or peach wood for next time and see if that makes any difference over mesquite. The temps stayed consistant the whole time. 250 in the middle on the grates. The grate by the box was 250-300 the entire time and the far end was 200 to 250. Also want to put in apple juice or some other juice in the water pan instead of water. That's about all for this time.
